The Ozarks are nice, but if you want to travel a little, there are some great places in other parts of the country. Check out this book or buy it online. Best Fly-Fishing book ever:

I would suggest you try either the White River in Arkansas, The North Fork of the White in Missouri or Taneycomo in Missouri. All three offer good, though very different trout fly fishing experiences and all three are close enough to tourist venues such as Branson and Springfield (home of Bass Pro Shops) in Missouri and other sites in Northwest Arkansas to keep the non fly fishers in the family entertained. As an aside, don’t overlook the opportunities for smallmouth on the fly rod while you are in the area.

I don’t know of any guided fishing trips, but I do know of some locations to fish in the Ozarks. The white river is a awesome trout river. I go to roaring river in Missouri quite a bit to fish for trout. A few more good locations would be the lower Illinois river in Oklahoma, or the lower Mountain fork river in southeast Oklahoma.

the White river Arkansas has tons of guides there so check out who you think is the best. I suggest the trout fishing there they have 4 varieties of trout and that is where the world record brown trout came from
